I don't know why Yamaha uses plastic screws on the windshields but they have for years. My FJ1200 came with them. Best guess, is so you won't crack the windshield over tightening it.
Of the five bikes I've owned four had OEM or aftermarket windshields.  Only the Yamaha had plastic fasteners.  While I've managed to strip the heads of a wide variety of bolts over the years, I never managed to damage the screen on any of the bikes.  Most of them had rubber fittings that would distort a heck of a lot if you over-tightened, so it was natural to not do that. 
All the plastic bolts did was make it dreadfully easy for me to destroy the plastic bolts.
 
At least this is one of those cases where fixing the problem is cheap and easy.

Buckybuck, how's the wind noise? How tall are you and are you looking thru the shield or over top?
