How about a hydration pack so you don't even need to take your hand off the bar
You can even run your drinking tube into your top case fitted with a 5 gallon container of your favorite liquids.......

So....no recommendation for a gyroscoped cup holder?
That was my suggestion for "gimbal." Depends on what you want to attach to. Plenty of other choices since they're popular in marine and aviation.  
Even if I had a modular or open face helmet I'd probably use a Contigo autoseal in the tank bag. With the full face I'm pretty limited to a hose going to a bladder in the tank bag or camelback etc.
